15 Minute Taco Bowl

A one-pan meal that's perfect for breakfast or lunch. Ready in only 15 minutes, it delivers on protein and healthy fats, and is sure to keep you feeling full until your next meal.


This is a great meal to half-prep in advance. Just follow the first step to cook the mince and store in an airtight container in the fridge until required.



Ingredients (for 2 servings)


  • 230g Extra Lean Minced Beef

  • 3/4 tsp Taco or Fajita Seasoning

  • 3 Eggs

  • Sea Salt & Black Pepper (to taste)

  • 120g Baby Spinach

  • 1 Avocado (sliced)

  • 70g Salsa (homemade or shop-bought)




Method

  1. Heat a large skillet over medium heat. Once hot, add the beef into the skillet. Use a spatula to break it apart. Add the taco seasoning and cook until browned and cooked through, remove with a slotted spoon and set aside. Drain any excess drippings from the pan.

  2. Whisk the eggs in a bowl. In the same skillet, over medium-low heat, add the eggs and cook until fluffy and cooked through. Season with salt and pepper and set aside.

  3. Divide the spinach between plates, or into containers. Top with beef, eggs, avocado, and salsa. Enjoy!


Store leftovers in an airtight container in the fridge for up to two days.

If desired, top with shredded cheese or sour cream.
