Cheeseburger Pasta

This recipe is guaranteed to become a regular in your meal rotation.


All the flavour of your favourite burger bar cheeseburger but in a pasta dish that is sure to delight all the family, kids and adults alike! A simple one-pot recipe, it freezes well and is perfect for batch cooking.





Ingredients (for 6 servings)


  • 1 tsp Extra Virgin Olive Oil

  • 680g Extra Lean Minced Beef

  • 1 Carrot (medium, finely diced)

  • 2 tsps Dried Basil

  • 1/2 tsp Sea Salt

  • 400g Tinned, Chopped Tomatoes

  • 360mls Water

  • 400g Whole wheat Fusilli (dry)

  • 160g Baby Spinach (chopped)

  • 110g Cheddar Cheese (grated)


Method


  • In a large pot or Dutch oven, heat the oil over medium heat. Add the minced beef, carrot, basil, and salt. Cook for five minutes, stirring often. Drain any excess oil.

  • Add the chopped tomatoes, water, and fusilli. Stir until well combined and the fusilli is mostly submerged. Cover with a lid and cook for 10 to 12 minutes or until the pasta is cooked through.

  • Open the lid and stir the chopped spinach through the pasta. Top with the shredded cheese and close the lid until melted. Divide between bowls and enjoy!


Store leftovers in an airtight container for up to three days.
