Chocolate Avocado Mousse

A couple of weeks ago (just before the increased restrictions were introduced), I had a couple of friends over for lunch.


It was a great afternoon playing catch-up and plotting potential future post-pandemic adventures. It was also an opportunity for me to show two of my besties that healthy food does not need to be beige, bland or particularly leafy!


We had lentil, sweet potato and spinach dahl. They both loved it - so much so that one of the girls has now made it twice herself, also for her family, and has forwarded the recipe on to other friends and relations. What a win!


I probably could have left it there but, if you are going to prove a point, what better way than to include chocolate?

So let me introduce THE most simple yet deliciously decadent dessert - and it's made with only 5 ingredients!


Chocolate Avocado Pudding


Rich, smooth and much healthier than shop bought.

Your guests will never guess that it contains avocado (I promise!)


Ingredients:

( 2 servings)


• 1 avocado medium sized, ripe

• 3 tbsp cacoa powder

• 3 tbsp maple syrup or honey

• 5 tbsp milk or milk alternative

• pistachios or other nuts for topping (optional)



  • Cut open the avocado and scoop out the pit. Chop into large chunks and put in the blender.

  • Add the cacao, maple syrup or honey, and milk. Blend, starting on low and then moving to high speed until smooth.

  • If the avocado is larger, you will need a bit more of each ingredient. If it is too thick, drizzle in a bit more milk. Add more cacao or honey or maple syrup to taste.

  • Refrigerate the pudding and serve cold. Top with pistachios if desired.


Replacing the pistachios with berries and/or a dusting of cacao works well too!



Guess what? It was another complete win!


As a result of that lunch, I also now have two more people who are super keen to learn more about their nutrition and how to widen their food choices!


The lesson? (No, it's not don't come for lunch at mine!)

It's don't knock what you haven't tried and, preferably, try it with someone who can help you to take small steps to better health.
