Pistachio & Pomegranate Bark

Are you on the look out for a simple yet incredibly delicious chocolate treat this Christmas?


Then this is for you!

And, with just 4 simple ingredients, it couldn’t get much easier to make.


Dark chocolate mixed with juicy, sweet pomegranate seeds, crunchy pistachios and coconut flakes is a wonderful combination of flavour and texture .... and it's pretty healthy for a treat that tastes so decadent!




You'll need:


  • 300g Dark Chocolate (at least 70% cacao)

  • 250g Pomegranate Seeds

  • 75g Pistachios (shelled and chopped)

  • 30g Unsweetened Coconut Flakes



Method:


  • Line a large baking sheet with parchment paper. Prepare the pomegranate seeds, pistachios and coconut flakes in bowls. Like this >>>


  • Bring approx. 4cm depth of water to boil in a pan and place a heatproof bowl on top of the pan so that it fits snuggly but doesn't touch the water.


  • Lower the heat to a very gentle simmer. Break up the chocolate and add to the bowl, then leave to melt for 4-5 mins, stirring regularly. Ensure no water is able to escape into the bowl. Remove from stove top immediately once melted. Do not overheat as this will cause the chocolate to get lumpy.


  • Pour the melted chocolate onto the baking sheet. Use a spatula to smooth the chocolate into an even layer, about 1/4 inch thick.


  • Immediately sprinkle the pomegranate seeds evenly over top, followed by the pistachios and finally the coconut. Press in gently and transfer to the fridge or freezer and let chill for 20 to 30 minutes, or until firm.


  • Once the chocolate is firm, break or cut it into pieces and enjoy!


Store in an airtight container in the fridge for up to 5 days. Can also be frozen, using wax paper to separate the layers.



Variations:


Nut free: replace pistachios with pumpkin seeds
