🌶 🐓 Chilli Chicken 🐓🌶

This has to be one of the most flavoursome mid-week meals and a firm favourite in our house. There’s a couple of steps but it’s still only a 20 minute cook.


400g chicken breast, cut into cubes

1 green pepper, diced

1 medium onion, diced

1-2 sliced green or red chillies (your choice!)

3cm ginger, coarsely grated

1 clove garlic, coarsely grated

juice of 1/2 lemon

2 tsp ground almond

4 tsp light soy sauce

1tbsp white wine vinegar

1 tbsp tomato ketchup

olive or avocado oil for frying

sea salt and black pepper for seasoning


  • Marinate the cubed chicken for at least 15 minutes with the salt, pepper and lemon juice.

  • Dust the chicken cubes with the ground almonds and fry until golden brown. Set to the side.

  • Heat 2-3 tbsp oil in a pan and add the diced onions, pepper and chillies.

  • Cook for 2 minutes before adding the garlic and ginger and, 10-15 seconds later, add the soy sauce, ketchup and white wine vinegar and mix.

  • Serve with your choice of wholegrain - a mix of brown basmati and wild rice is great - and enjoy!
