🌶 🐓 Chilli Chicken 🐓🌶

This has to be one of the most flavoursome mid-week meals and a firm favourite in our house. There’s a couple of steps but it’s still only a 20 minute cook.
400g chicken breast, cut into cubes
1 green pepper, diced
1 medium onion, diced
1-2 sliced green or red chillies (your choice!)
3cm ginger, coarsely grated
1 clove garlic, coarsely grated
juice of 1/2 lemon
2 tsp ground almond
4 tsp light soy sauce
1tbsp white wine vinegar
1 tbsp tomato ketchup
olive or avocado oil for frying
sea salt and black pepper for seasoning
Marinate the cubed chicken for at least 15 minutes with the salt, pepper and lemon juice.
Dust the chicken cubes with the ground almonds and fry until golden brown. Set to the side.
Heat 2-3 tbsp oil in a pan and add the diced onions, pepper and chillies.
Cook for 2 minutes before adding the garlic and ginger and, 10-15 seconds later, add the soy sauce, ketchup and white wine vinegar and mix.
Serve with your choice of wholegrain - a mix of brown basmati and wild rice is great - and enjoy!
